The Four Basic Cowboy Food Groups

Last night for dinner I made a Pioneer Woman recipe called "Beans & Cornbread".

I felt really good about feeding it to my family, because it contains the four basic food groups that cowboys men need: beans, bacon, whiskey, and lard.

(I'm kidding...I would never serve my cowboys family lard for dinner.)

Oh and by "family" I mean Shannon and me.....Our punks boys won't touch beans...or cornbread. So they had sandwiches and fries for dinner.

I only made a couple of changes to the recipe...I added some onion and bell pepper, because I'm just crazy that way. Not to mention my cowboy husband loves him some onions and peppers for dinner.

And make no mistake, I live to please that man.

I also made the cornbread in a muffin pan. That way there is no fightin' discussion between Shannon and me at the dinner table about who got the biggest piece of cornbread, because they are all the same size.

Cowboys Men are so sensitive that way.

I'm just saying.

Here are a couple of pictures of what was served last night at "Amy's All You Can Eat Diner". (Open 24 hours a day, seven days a week. No reservations required.)

The boys ordered:
Steak and cheese sandwiches topped with grilled onions and peppers, served on whole-wheat toast,with a side order of fries.

All my cowboys boys love some onions and peppers for dinner.

And Shannon (and I) ordered:
Beans topped with shredded cheese and sour cream, with just a 'dash' of Tabasco sauce, served with two cornbread muffins (no fightin' necessary).


That's right....that's how I keep my cowboy man happy.

I used more of my Angel Food ingredients for this meal. (Pinto beans and onions for our dinner; sandwich steaks and fries for the boy's dinner. Some of these ingredients were left overs from our previous orders.)

Just remember, you will need a lot of time once you go there , because her website is extremely addictive pleasing to the senses.

But go ahead, one look (or thirty) won't hurt you.

I don't have a problem with it.

Looks good, but blah on the peppers and onions...guess I'm no cowboy!! ha!!
